Week 29 Friday (8/1/14)

Recipe Review
Today’s Recipe and Location:           Good Morning Muffins
Found in: The Pioneer Woman blog

I figured out that there are 226 calories per serving, if 24 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

I love, love, love these muffins! There is a gentle hint of orange, which is refreshing and so darn good. They are truly healthy and low in calories. I relished the one I ate and will probably have another tonight for a snack.  I was glad that I sprinkled the wheat germ on top as it gave the topping a little crustiness, which was great. The wheat germ was optional and I recommend it.

Pumpkin Pie Cake
Grandma got it from Sharon Brandt

½ cup butter
1 egg; slightly beaten

2/3 cup milk

Topping
1 cup of cake mix that you set aside
¼ c. sugar

¼ c. softened butter

Directions:
Mix together the yellow cake mix, butter and 1 egg. Press the combined mixture into a 9 x 13 inch greased pan.
Over this pour in the filling mixture of: pumpkin pie filling, 2 beaten eggs and the milk.
To make the topping, mix together the cake mix, sugar, cinnamon, and softened butter. It should be in crumbles. Sprinkle the topping over the filling.
Now, bake in a 350 degree oven for 45 – 50 minutes or until a toothpick comes out clean.
