What the Beck???

Recipe Review

Today’s Recipe and Location: Cajun Brisket
Found in: The Pioneer Woman blog

I figured out that there are 438 calories, if 14 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

I loved this brisket. It is so different than her other ones, which is nice to have so many options.  I exchanged beef broth for the coffee, because I just hate the flavor or smell of coffee. I hope it wasn't really important to the flavors. The grits are in the ingredient photo because Ree serves this brisket with a serving of cheese grits. Brisket truly fills me up, and I love to have a lot of it in the freezer!!!

Here are the ingredients that I used to make this recipe

I began by mixing together the ingredients of the dry rub

 I stirred it together

I rubbed the mix on both sides of the seven pound brisket

I secured the brisket in cling wrap,
and put it in the refrigerator for 24 hours

The next day, I put the brisket in a disposable pan,
and began by adding the chopped onion, celery, and garlic.

 I chopped the green pepper

I added the green pepper to the pan.
I loved the colors!

The last to be added were the tomatoes and paste

This seven pound brisket made 14 servings for me

This is what one serving looked like.
Gosh, was it great!

Today’s Recipe and Location: Pasta with Pancetta and Leeks
Found in: The Pioneer Woman blog

I figured out that there are 218 calories, if 9.5 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

I loved this dish. I am finding that I am a big fan of anything with leeks in the recipe. The pancetta adds a great deal of flavor to the dish. This is an easy dish to make, and is very filling.  Joe and Nicole Serpico gave me a thumbs up on this dish, too. I love it, Ree.

Here are the ingredients that I used to create this recipe.

The pasta was put on to cook.

 I sliced up the leeks

I always soak the chopped leeks in
water to rid them of dirt!

I cooked the pancetta until it was slightly browned

Next, the leeks are added to the pancetta.

After they are cooked, I added the wine.
Yes, the lid is on the bottle because
I already poured it in the pan and forgot
to photograph what I was doing.

I measured my favorite ingredient - heavy cream!

It is so exciting to add it to the pan.
OMG - I sound like a crazy person.
My love for cream is crazy

The salt and pepper are added to the pan.

What a horrible picture of the cheese

 In goes the pasta!

The final product.

Today’s Recipe and Location: Cherry-Pineapple Dump Cake
Found in: The Pioneer Woman blog

I figured out that there are 337 calories, if 12 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

Unfortunately, this was not a cake that I could taste, but I took this cake, as well as the Peach Dump Cake to the Sandwich Veterinary Clinic and they were a big hit.  These two cakes need to be part of every cook’s recipe box.

Here are the ingredients that I used to create this recipe.

I was supposed to put the cherries in the dish,
and then the pineapple, but of course
I did it backwards....not that it even matters.

 Pineapple

 on went the cake mix

 oodles and oodles of butter

The final product. YEAH!!!

What the Beck???

Thought of the Day
"It's not the face, but the expressions on it.
It's not the voice, but what you say.
It's not how you look in that body,
but the things you do with it.
You are beautiful."

Today’s Recipe and Location: Peach Dump Cake
Found in: The Pioneer Woman blog

I figured out that there are 310 calories, if 12 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

I think this is the easiest cake that I have ever made, and I absolutely loved it.  I shared it with my neighbor, Nicole, who feels the same as I do. This is a cake Nicole and I will make again.

Here are the ingredients that I used to create this recipe.

I sliced the sliced peaches a little smaller and "dumped"
them in the foil pan. I used this pan because I
was bringing this cake to my Vet staff as  thank you.

on went the white cake mix
Ree, you are brilliant. This cake is so easy,
 AND
fast to create.

I cut the butter into small pieces so it fit all over the cake.

The final yummy product!

Today’s Recipe and Location: Pepperoni Chicken
Found in: The Pioneer Woman blog

I figured out that there are 470 calories, if 4 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

I liked the flavor of this chicken. Of course, I am sure that is because of the pepperoni and cheese, which is my pizza meat of choice. I think it had too much sauce, as I always ask for light sauce when I order pizza. I think it would be better then.

Here are the ingredients that I used to create this recipe

I took a chicken breast and cut it in half,
so that it was a thin cutlet

I melted the butter and oil to cook the chicken

I added salt and pepper and fried the breasts

Because I made these in the early evening, I made them
to freeze. I am beginning to build the meal,
so I put the marinara sauce
in the individual dishes.

The chicken has nice color and is ready to go
in the individual dishes.

I added a layer of pepperoni on top of the
marinara and the chicken breasts.

The next step was to add the cheese

The final touch was to add the parsley.
I think I need to go to the eye doctor, or
maybe sign up for a photography class.

The Pups are Longing to be Outside

I had to be sneaky and take these photos, because
they will jump up if they see me.

Sage didn't see me in the door on this one.
This was one of the beautiful days we
had in March.  Oh, how we long for summer.
