Week 40 Friday (10/17/14)

Recipe Review
Today’s Recipe and Location:           Chicken Quesadillas
Found in: The Pioneer Woman blog

I figured out that there are 711 calories per serving, if 6 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

Here is the final product.  I added five jalapenos
as a decoration and additional flavor.

I love this quesadilla. The taco seasoning made this so yummy. I must say that this was made with taco size tortillas and I was very satisfied after eating just one. I did add the sour cream and sliced jalapenos on top for added goodness and a little kick.

Pecan Tarts

Crust Ingredients:
½ pounds salted butter
1 (3 oz.) package of cream cheese
1 cup flour

Filling Ingredients:
1.5 cups chopped pecans
¾ cups loosely packed, dark brown sugar
1/8 pound butter, melted
1 egg, well beaten
¼ teasp. salt
1 teasp. vanilla

Mix together ingredients for crust. For each crust, break off enough dough to line each cup in a miniature muffin pan. It is not necessary to grease pans. Mix nuts with sugar. Add vanilla, melted butter, beaten egg and salt. Fill even with crust.
Bake 325 degrees for 30 minutes.
