This recipe makes a
lot of macaroni salad. It really did make 12 full servings. I gave half of it
to Nicole and the rest of the Serpico family. I heard back that they liked the
salad. Nicole had a great idea to make it an entrée. She suggested that we add
chicken to the salad. I think that sounds like a great idea. For me, I would
have loved to have it a little more spicy. I really liked this salad and the
calories were low.
Trivial Triffles
This
summer I was thrilled to spend a day with my niece, Molly Mendel. We were going
to work on her wedding plans, but as usual, she was already up to date on her
save the dates and programs, so instead, we spent the day in her classroom.
I
had so much fun helping her set-up her classroom. One of the things I loved was
her word wall. She made a 3-D title using paper plates! I loved it. The wall
just made me smile. She oozes creativity, and I am so fortunate that she shares
her ideas with me. I am so blessed to have such a wonderful family.
Memory Musings
Today, I was driving out to Costco on Eola Road when I remembered how we had to go through that little town with just a post office and five or six railroad tracks. There was always a train to wait for. Now, I passed Jewel and went up the overpass over the tracks. When I looked down, I could see that little area with the post office. The road went from two lanes to four lanes and bypassed that little area. I guess that’s just the price of progress.
