Week 62 Monday (3/16/15)

I figured out that there are 726 calories per serving, if 4 servings or 484 calories for 6 servings, or 363 calories for 8 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

       My entire house was filled with the smell of roasted garlic after cooking these wonderful potatoes.  They were so amazing that I enjoyed every little bite. The garlic was partially crunchy and brought so much flavor to these potatoes.  Of course, the whole milk and cream cheese didn’t hurt.  I don’t ever want to eat mashed potatoes again that do not include cream cheese!  These are a definite keeper.


The first step is to roast the garlic in the oven


Just quickly peel the potatoes
I love my new peeler!


Boil up the taters!
Wow! Look at all of that starch


Pour them into a large bowl

Add the butter and salt and pepper




Just put dabs of cream cheese
all over the potatoes




Now mix well and add in the
amazing roasted garlic.


There is nothing better than yummy
potatoes in the freezer ready to eat

Random Reflections - Bucket List #50

It would be really fun to host a family brunch or luncheon just for the heck of it.  Anyone who can attend is invited. Maybe it should be a “I am retired” luncheon. This is something fun and easy to accomplish – that’s the ticket!

Host a family brunch

I am going to learn as much as I can about large animals
Make repairs in each and every room of my home to prepare to sell
Research Hadrian’s Wall for visit to Scotland
Enter a quilt in a local fair
Write a book about school for parents
Host a game party
Purchase a truck
I would like to learn more about fostering animals
Visit the narrowed list of Kentucky towns each for a weekend
Have a B.M.I. of 24.9 or lower
Return to Florida/Alabama and see old friends

Wants and Wishes

     What I really want right now is a week off for Spring Break. There is nothing better when the weather starts to change than a week of vacation. It is amazing to me how quickly the year is going right now. I have less than 60 days left of school forever. That is such a foreign concept to me, but one I welcome. Spring Break is a time to rejuvenate before the final push. It just can’t come quickly enough for this girl.
