Week 61 Saturday (3/14/15)

I figured out that there are 102 calories per serving, if 18 servings are made or 77 calories if 24 are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

         Ree was right on when she said that this is easy to make – darn right.  It has a whole whopping three ingredients.  The big deal is the amount of time that it takes to make this side dish. There are nine, yes nine layers and you need 30 minutes between each layer for it to set. That means you need to start in the morning.  Silly me, I started after five ‘clock in the evening. This caused a problem because I ended up only making seven layers out of total frustration and exhaustion. Nine would have looked better, but my bed was calling to me. I shared it with the kids in my class and it was a big hit. They loved that they could peel the layers apart and eat them individually.  How silly that seems to me. Okay, yes I did it, too.  So, begin the process in the morning and it will be a cinch!

Random Reflections

         Last Sunday, I spent the afternoon with my niece, Molly Jo. Molly is getting married to a wonderful man named Bryan. We are so blessed to have him become an official member of our family.
         Molly and I had a mission: to put together the order of her wedding ceremony. I was so impressed that Molly and Bryan had searched the internet for vows, and different ideas for the ceremony. We had a lot of fun cutting and pasting ideas together to make it the perfect ceremony for their special day.
         What I truly love about Molly is the sheer happiness she exudes. She is so much fun to work with and it makes for a joyful day. This morning (Wednesday), I remembered that we forgot to accomplish one of our goals. We didn’t go on line and purchase my license, so I could officiate the ceremony.  I need to talk to Molly about what I need to do, so I have everything I need to add to their day. At least we have months before this must be completed.
         Thanks so much Molly, for including your old Aunt Rock in the planning and actual ceremony.  I love you and Bryan so much.

Helpful Home Hints

         I just found yet another job that I need to accomplish over spring break. The seal between the backsplash and counter is gaping, so I need to reseal behind the sink and down the wall.  This should have been done before, yet I always seem so busy.  Of course, that is not an excuse – okay, maybe I thought I would try it.  Now, it is bothering me and really needs to be done. So, this is another thing on the spring break list to accomplish. Having a home is work – plain and simple.
