Week 58 Friday (2/20/15)


It is now 8:30 on Friday night, and I am just now posting this entry.  I am a total mess.  Thank Heavens I can catch up this weekend, and possibly even get ahead.  Wouldn't that be wonderbar!


Recipe Review       
Today’s Recipe and Location:           Buffalo Chicken Bites

I figured out that there are 145 calories for a 4 – 5 chicken bites serving. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

         If you ever need a little kick, then this is the snack for you. These are spicy little gems that taste absolutely amazing when dipped in the Blue Cheese Dip.  They did take a little while to prepare because first you make the Dip and set it in the fridge until you are ready to serve.
         Now you cut up the chicken into bite size pieces and make the batter to coat these bites. Next comes the hard part for me – frying the chicken bites. Why do I always get burned when I fry something up?  I think I am a relatively intelligent person, but I lose all intelligence when frying. I always somehow splash the grease. Tonight it was little specks on my face and neck. I am sure I will look gorgeous tomorrow at school.           
           The final step is to coat the little fried pieces with the hot sauce. After coating you bake them for a few minutes, and they are ready to serve.  It took a little while, but it was truly worthwhile.  We’ll see what the gang thinks at school tomorrow.
      They were a big hit at school!!!


I use Market Day Chicken Breasts
because they are exactly four ounces

I added the cut up chicken to the coating batter


Being careful not to get splashed,
I fried a few bites up at a time


I put them on a paper towel,
 as I fried up the next batch


The pile grew and grew

Now, it was time to make the Buffalo Hot sauce


I moved the chicken to a bowl, so I could coat
them with the wonderful, spicy sauce


Yes, that is floating sticks of butter
What could be better?????

The chicken was soaking up
the yummy sauce


It is now time to bake them for awhile
to set the sauce


This is the most wonderful blue cheese dipping
sauce.  Gosh, I love this sauce.
I was eating beef tenderloin for lunch,
and added this atop the beef.  HEAVEN!!!


Here they are, a finished product.
Ready to dip.
