Week 57 Sunday (2/15/15)



Recipe Review
Today’s Recipe and Location:           Bacon – Wrapped Filet

I figured out that there are 92 calories per ounce for the filet and then add 80 calories for the peppered bacon. This one has to be figured individually since the filets were cut by me and all were somewhere between 4 and 7 ounces.  (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

         This luscious dinner came from the Valentine’s Day section of the Holiday Book. This bacon wrapped filet is so darn special.  It literally melted in my mouth. Of course, the meat is from Blue Goose, which makes it prime meat. I elected to wrap it in peppered bacon rather than the plain old stuff. This one made six or seven serving which means that I will be eating well for a long time.

This is the best peppered bacon I have ever eaten
also purchased at Blue Goose in St. Charles.


I wrapped up the filets with the bacon,
 and bound them with a toothpick.
Then, I heavily salted and peppered them.

I then froze the extras to enjoy on another day.
These are my great glass dishes, which
keep the food easy to see and ready to eat.

      
Trivial Triffles

         I realized this week that I am only three and a half months from retirement. I have thought long and hard on where I want to volunteer to serve others.
         I recently read one of my favorite quotes by Mahatma Ghandi.

“The best way to find yourself, is
to lose yourself. in the service of others.”

         Retirement is going to be a new and exciting journey filled with fun, excitement, and the freedom to choose my new path.

           

Memory Musings

         I was thinking back to the days when I played a lot of tennis. I was very fortunate to play with many fabulous women including many of my Mom’s friends. A big thank you to Shirley, Jean, Jan, Donna, and Joyce who made every game fun and filled with laughter.
