According to Whfoods.com:
Collard greens are filled with Vitamin K1. One serving will give you 1,000% of the daily requirement. This one could do me in. My Coumadin would be way off if I ate any of this food.
Most people love it because it helps lower that nasty old cholesterol level. I have always seen it steamed which I am sure keep all of the nutrients in the dish. I read in several places that it helps to prevent some types of cancer. WOW!

Random Reflections

I am so excited that I found the first place that I can go and work with horses and dairy cattle. My gynecologist, Dr. Lee, called a friend who is going to let me visit her farm over spring break to see how my allergies handle a barn and being with large animals. She was very nice. I learned that she is a high school teacher somewhere north of St. Charles. She was quite gracious and willing to let me spend some time at the farm.  YEAH!

Irksome Ideas and Images

One thing that is totally annoying is when I can’t read my own writing. Sometimes I rapidly write myself a note and then struggle to figure out what it said.  It never pays to be in a hurry!
