Recipe and Location: Watermelon Pico De Gallo

This is one confusing dish to me. Is it a
dip? Is it a side salad? Is it an addition to a chicken or fish entre? According to Ree, it is all of these. I
can’t imagine eating it with chips because I am a creamy dip kind of girl, so I
decided to pass on this dish. I hope someone I know will make it so I can hear
your thoughts. For some reason, the side salad makes sense. I think it would be
fabulous served with a hot dog or hamburger. What do y’all think?
Gabbin’ About Gratitude
Today,
I am grateful for my old 2001 van that keeps on running. I am so thankful that it starts
everyday and gets me where I need to go. The plan is to purchase a new car in
May of 2015 and retire this old Ford. I have always wanted a Ford Flex, but am
now wavering after researching farmettes because I may need to purchase a
truck, too. So, I may have to buy a less expensive car so I have the money to
buy a truck if one is needed.
Memory Musings
I
have many fond memories of my sisters when we were kids. One of my favorites is
of my sisters, Susan and Kim, walking down Hilltop Drive with their friends,
Mary and Laura Stopka. Yes, those are Kathy’s sisters. That doesn’t sound like
a memorable moment except that they were all dressed up in high heels, fancy
dresses, and hats. They were also
in their late elementary years – not three or four year olds. My sisters had a wonderful, extremely
long childhood. Nowadays, that just isn’t done. I am so happy that my sisters had the childhood that they
did!
