Flatbread Pizza

For
all of you health nuts, here is the pizza for you! This one was created with
flatbread – very different than the puffed pastry pizza presented earlier in
the week. Ree put mushrooms,
tomatoes, and a choice of either zucchini, squash, or eggplant. Need I say
more? As a person who rarely eats
veggies, this one is a nightmare for this meat and potatoes girl. I’m sticking with pizzas for the
Marlboro Man, sorry Ree.
Fabulous “Family and Friends” Food
Chicken and Rice Soup
(This is something I made while living in
Florida)
Ingredients:
½ stick of butter
1 medium onion
1/8 cup celery,
chopped very small
¼ cup flour
4 cups chicken
broth
1 cup heavy cream
1 cup ½ and ½
1 – 1.5 cups
chicken, cut into bite size pieces
¾ cup cooked rice
¾ cup sliced
pitted black olives
salt and pepper
Directions:
In a soup pot,
melt the butter. Add the onion and celery and cook it until it is cooked. Stir
in the flour. Cook this for about 3 – 3.5 minutes. Add chicken broth, cream, and broth and cook on LOW for
about 20 – 25 minutes. Add salt and pepper to taste. Serve it with saltine
crackers.
