Recipe Review

Today’s Recipe and Location:           Blackberry Cheesecake Squares

         I love cheesecake.  Unfortunately, blackberries and I do not get along (too acidic), so this recipe is out. If I made this I would have to scrape off the top and just eat the yummy bottom – kinda defeats the purpose of making this recipe.
         Blueberries are really good for you because they are an antioxidant that helps fight cancer. They are also really good for people who live in a big city because they can help fight the results of breathing in pollution or smoke.
         In Illinois, the blueberries are at their peak in July, but for my friends in the South – June is the time for you.  For all of you dieters – blackberries are only 62 calories per cup – think about eating several cups! Yeah!!!!
      
Craft Corner

         One summer I tutored students in creative activities. We made mini apple or peach pies. These pies were delicious and adorable. Each student received four pies, a basket, and a gingham cloth they stenciled with apples or peaches. The sessions were fun and the students learned a cooking and art activity.  As a teacher, it was a real joy. These baskets are a great craft to make and deliver to a new Mom, an ill neighbor, and your parent.

         Things are going great with Willow. She is up to 18.8 lbs. and slowly rising. She really needs to be over 20 lbs. and the process is slow, but she is happy and healthy.  Life is looking really great for my girls and me.

She's still a little thin, but her energy is on the rise.
