Another amazing potato
recipe from Ree Drummond! Ree has taken a loaded potato and created mini
versions of it. This would be the
perfect recipe for children. Most kids that I know, don’t finish an entire
baked potato so these little circles of goodness would be the perfect side dish
to serve. I also love them because if you want to savor the flavor and have a
smaller portion, these are absolutely perfect.
I love, love, love
the flavor of the bacon, sour cream and grated cheese. Just writing about it makes me
hungry. Need a new side dish –
here it is!
Gabbin’ About Gratitude
I
am so thankful for the invention of air conditioning. The first real air
conditioner was installed in a mansion in 1914. When the weather reaches 83
degrees I turn on my air. I cannot stand being overheated which is why I will
never live in the south again. I love winter and the Illinois seasons so I will
stay put in the Midwest. THANK YOU FOR AIR!!!!
Memory Musings
After I returned home from living in Florida and attending Gulf Coast CommunityCollege, I resumed Junior College at both ECC and Waubonsee.
After I finished there and changed majors at least two times, I moved to Western
Illinois University in Macomb, IL. I was assigned to Higgins Hall 16th
floor. What I loved about Higgins was that is was a CoEd dorm for juniors and
seniors and students over 21 years of age. This was important because the last
thing I wanted was to live near students who are finally free for the first
time from parental restraints. They are wild, keep crazy hours, and are a lot
wilder than those students who have attended the University for a few years.
I
loved my college friends. There was Kendra Bob (I gave her the Bob part) and
Laurie who roomed together. They were so much fun. Next, we had LO and LA –
both Lauras, but with two different spellings. And finally, the first person I
met there Sudena Carriger, who I called Sudley DoRight. She was vivacious and
full of energy. Sudley was always happy and became a wonderful friend.
My
roommate was named Bev. We lasted together for one semester and then she moved
out to another dorm. Bev was quite antisocial and didn’t like the other girls
being in our room. I was quite outgoing, and had the biggest TV, so everyone
congregated in our room. I called
my Dad and told him the problem and he told me to keep the room as a single. I
was so thankful and knew I would be much happier alone. I kept the single for
the next year and graduated happily in 1984 with a Bachelor of Science degree
in Education.
I
wonder what ever happened to all of the girls from Higgins 16th
floor?
