What the Beck????

Recipe Review

Today’s Recipe and Location: Mercantile Snack Mix
Found in: The Pioneer Woman blog

I figured out that there are 339 calories, if 24 servings are made. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

This was extremely easy to make and tasted wonderful. Of course, that is only the tip of my iceberg. I put it all together quickly and was thrilled to be taking it to take to a Memorial Day Party. I followed the directions to a Tee (is that how you spell Tee in this sentence, Donna??) I didn’t encounter any problems until the final 10 minutes of baking it. I can only cook on an electric stove/oven at the moment.  Apparently, I don’t really know how to do that. Ree said to stir it every 10 minutes, so I did and it was going well until the kitchen was
filled with smoke. I don’t know if it was this particular oven or all electric ranges, but the entire bottom burned on both baking sheets.  The sugar melted all over the foil. I think I should have stirred it every 5 minutes for this oven. I did find a few pieces on top, which is how I found out it was so tasty.

I have learned a valuable lesson about my new ovens, so it wasn’t a total loss. I can’t wait for my gas stove/oven to be set up!!!!!

Here are the ingredients that I used to create this recipe.

I began by putting the popcorn in a VERY large bowl.

I added in the Corn Chex - don't ya just love them?

 In went the mini pretzels.

The last ingredient was the dry roasted peanuts.  YUM!!

Now, on to the topping.  I began with the brown sugar.

 I added in the butter,

 and the light corn syrup.

I heated it up in a saucepan.

The mixture was brought to a boil.

I poured it all over the dry ingredients.

It looked so great.

 I stirred it all together.

 I prepared two baking pans.

I poured and flattened the snack mix in the sheets.

It looked good, but it was soooooo burned underneath.
I had to throw all of it out.
I took me four days to get the burned smell
out of the cottage.  What a drag!!!!

I will definitely make this one again and
do a much better job.
