Recipe Review

Today’s Recipe and Location: Italian Meatloaf

I figured out that there are 619 calories,  if 8 servings are made, or 495 calories for 10 servings, or 413 calories for 12 servings. (Please note that the calorie counts vary depending on the specific brands of ingredients that you choose to use.)

         This makes one very large meatloaf. I actually made three loaf pans, since I planned on giving some away to my niece, Alaina. Even though I screwed up the recipe, the meatloaf tasted good.  It is very different than any I have ever had before.  I would definitely make this again – actually following all of the directions next time.





 Here are the ingredients I used to make this recipe.
I also used milk, but I already mixed it with the bread.

 First, I mixed the bread and milk.


 I now mixed the meat, eggs, cheese and spices
in a large bowl.

  In a separate bowl, I mixed diced tomatoes, 
brown sugar, and the condiments and spices.
I then mixed the ingredients in the two bowls
together with the bread mixture.
BIG MISTAKE!  I found out later that this
mixture was to go on top of the meat/bread mixture
after I put on the pancetta.  OOPS!  Mine was added 
into the meat.  Oh well - sorry REE!
It definitely made the body of the meatloaf 
not as solid as it would have been as a topping.



 I topped the mixture with pancetta.  
This is my first time using pancetta.

 This recipe actually made three loaf pans
without the tomato mixture on top. Yikes!
