Today’s
Recipe and Location: Pan Roasted Chicken
Thighs

I figured out that there are
254 calories, if 6 servings are made. (Please note that the calorie counts vary
depending on the specific brands of ingredients that you choose to use.)
Chicken thighs are
the best part of the bird in my opinion. I love the addition of the lemon as it
added such a wonderful flavor. I ran out of chicken broth, so I doubled the
white wine and it was so yummy.
Next time, I will use the chicken broth, because so much of the wine
reduces.
Here are the ingredients that I used to create this recipe.
I began by salting and peppering the chicken thighs,
and the coating them with flour all over.
I chopped up the onion and garlic
I also grated the lemon, and measured the wine,
so it was all ready to go.
I love these ramekins. They make
food prep so much faster and easier.
It was now time to brown the thighs.
I just set the browned thighs on a plate and put it to the side.
First, I browned the onions and garlic.
Then I poured in the wine and let it reduce.
In went the broth and lemon zest and juice.
A little salt and pepper complete this stage.
I returned the thighs to the pans and let it cook.
The last stage is to put the skillet in the oven.
Here is my final little serving.
I would make the grits when I was ready to eat this,
but for now it was going in the freezer.
My girls were having fun in the 40 degree weather!
However, it was the calm before
the storm.
